Chocolate Tofu Mousse
1 package semi-sweet or dark chocolate chips
(2) 1 lb. packages water packed Silken Tofu, regular (Nasoya purple label)
Wash the top of the tofu container. With a sharp knife cut open the tofu package around the edges. Put the tofu in a colander on top of a plate and let drain on the counter to room temperature.
Put the chocolate chips into a microwavable safe bowl. Microwave on full power for one minute or more until the chips are melted. Stir the chips to make sure they are melted.
Put the warmed, drained tofu mixture into the blender and add the melted chips and blend until smooth.
Refrigerate for two hours or more until nice and thick or overnight.
