Chocolate Zucchini Cake


  • 2 cups all-purpose flour

  • 2 cups white sugar

  • ¾ cup unsweetened cocoa powder

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • 4 large eggs

  • 1 ½ cups vegetable oil

  • 3 cups grated zucchini


  • Preheat oven to 350 degrees F. Grease and flour a round tube pan or you can make into an oblong 9 x 13 baking pan.

  • In a medium bowl, stir together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon. Add the eggs and oil, mix well.

  • Fold in the zucchini until it is evenly distributed. Pour into the prepared pan.

  • Bake for 50 to 60 minutes until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

Cream Cheese Frosting:

Ingredients: 1 (3 oz.) pkg. cream cheese, softened 1/4 Cup butter, softened 1 tsp. Vanilla 2 Cups powdered sugar

Directions: Mix the cream cheese, butter, and vanilla until nice and fluffy. Add the powdered sugar gradually and continue beating until smooth and creamy.
