Chocolate Zucchini Cake
2 cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
4 large eggs
1 ½ cups vegetable oil
3 cups grated zucchini
Preheat oven to 350 degrees F. Grease and flour a round tube pan or you can make into an oblong 9 x 13 baking pan.
In a medium bowl, stir together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon. Add the eggs and oil, mix well.
Fold in the zucchini until it is evenly distributed. Pour into the prepared pan.
Bake for 50 to 60 minutes until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

Cream Cheese Frosting:
Ingredients: 1 (3 oz.) pkg. cream cheese, softened 1/4 Cup butter, softened 1 tsp. Vanilla 2 Cups powdered sugar
Directions: Mix the cream cheese, butter, and vanilla until nice and fluffy. Add the powdered sugar gradually and continue beating until smooth and creamy.
