Cinnamon Donut Muffins
(Makes 1 dozen)
2/3 Cup Water
2 tsp. Apple Cider Vinegar
1 tsp. pure vanilla extract
6 Tbsp. Unsweetened Apple Sauce
2/3 Cup Agave sweetener
2 Cups White non-bleached flour (you can also use Oat Flour)
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
For Cinnamon Top Coating:
Combine 3 Tbsp. Cinnamon with 1/4 Cup MonkFruit granulated sweetener
2 Tbsp. melted Ghee
Preheat oven to 350 degrees.
Line a 12 cup muffin tin with liners.
Whisk the water, vinegar, vanilla, apple sauce and agave sweetener together in a medium sized bowl.
Stir in the flour, baking powder, cinnamon and salt. Combine until mixed all together and batter is thin.
Fill each muffin tin 3/4 way full.
Bake for 20 minutes.
Remove onto cooling rack.
Brush the melted ghee over each muffin top (just to coat) and sprinkle the cinnamon sugar mixture over the top. (about 1 tsp. per muffin - or to your liking :))
