Lite CheeseCake

Ingredients:

  • 3 Eggs

  • 3 Cups nonfat Greek yogurt (I use FAGE 0% fat Greek yogurt)

  • 1 small box instant fat free/sugar free vanilla pudding

  • (or you can use cheesecake, lemon or even chocolate pudding also)

  • 1 tsp. pure vanilla extract

  • 2 T agave sweetener or 2T Coconut Sugar

  • Fresh blueberries or strawberries (optional)


Directions:

  1. Preheat oven to 350 degrees.

  2. Spray a 9-inch pie plate or springform pan with non-stick cooking spray.

  3. In a mixing bowl, combine the eggs, vanilla and sweetener until well blended.

  4. Add in the yogurt and pudding mix until well combined.

  5. Bake for 30-35 minutes. Remove and let cool on a rack for 15 minutes.

  6. Cover with plastic wrap. When completely cooled, store in the refrigerator for 4 hours or overnight.

  7. Top with fresh blueberries or strawberries.
