Omelet Muffins


  • 14 Eggs

  • 1 tsp oil

  • 1 tsp baking powder

  • ½ Cup milk

  • Salt, pepper

  • 2 Cups (give or take) chopped ham or cooked bacon or sausage

  • 1 medium chopped onion

  • 1 cup shredded cheddar cheese

  • 1 cup American cheese, chopped

(You can add any vegy’s you like – substitutes are encouraged!)


  1. Preheat oven to 375 degrees. Spray muffin pans with cooking spray. Chop up vegy’s, meat and cheese and mix together. Set aside.

  2. Mix baking powder with milk. Whisk together eggs, oil and milk with the baking powder, salt and pepper.

  3. Fill each muffin tin ½ way with the vegy, meat and cheese mixture. Pour egg mixture over the top of each muffin.

  4. Bake 18 – 20 minutes until fluffy and golden. Makes 1 dozen omelets.

Note: You can make these ahead of time and refrigerate for the week. Just microwave for 45 seconds and yummy for your tummy!
