Parmesan & Balsamic Roasted Cauliflower

Ingredients:

  • 1 large head cauliflower florets cut into 1” slices

  • 4 tablespoons extra-virgin olive oil

  • 1 T garlic powder

  • ¼ teaspoon salt

  • Freshly ground pepper to taste

  • 4-5 tablespoons balsamic vinegar

  • ½ cup finely shredded fresh Parmesan cheese


Directions:

1) Preheat oven to 450°F.

2) Place cauliflower on a large rimmed baking sheet. Sprinkle Olive oil, then balsamic vinegar, garlic powder, salt and pepper over the pieces. Stir around to coat each piece. Roast until soft and brown on the bottom, 15 to 20 minutes.

3) Sprinkle the cauliflower with the parmesan cheese and return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

4) Serve Immediately.
