Tomato & Basil Frittata

Ingredients:

  • 1 Tablespoon Olive oil

  • ½ cup chopped, yellow onion

  • 2 Cups fresh spinach, chopped

  • 10 eggs

  • ¼ cup milk

  • Salt, pepper

  • 2 medium ripe tomatoes, thinly sliced

  • 1 cup shredded mozzarella cheese

  • 2 T chopped fresh basil


Directions:

  1. Preheat oven to 350 degrees.

  2. In a large oven-proof frying pan, heat olive oil over medium heat. Add the onions and cook for 5 minutes, stirring often, until softened.

  3. Add the spinach and cook until just wilted, about 2 minutes.

  4. Combine the eggs, milk, salt and pepper and beat slightly. Pour the eggs over the vegetables and top with tomatoes, mozzarella and basil.

  5. Lower the heat slightly and cook until the edges are set, and the middle is cooked halfway through, about 5 minutes.

  6. Transfer to preheated oven and bake 15-20 minutes or until fully set and cooked through.

  7. Remove from the oven and allow to cool slightly. Slice and serve.
