Corn Salad

  • 6 ears corn, kernels stripped

  • 1/2 Cup mayonnaise

  • 1/4 Cup cotija cheese or feta

  • Juice of 2 limes

  • 2 tbsp. chopped cilantro

  • 1 tbsp. chili powder

  • 1 tsp garlic powder

  • Salt, pepper


1. Cut the corn kernels off the cobs. Add the corn kernels and water to a medium sauce pan, adding just enough water to cover the corn and salt well. Bring up to a simmer. Cover, and cook until corn is tender, about 4 to 5 minutes.

2. Drain well.

3. In a serving bowl, toss corn with mayo, cotija or feta cheese, lime juice, cilantro, chili powder, garlic powder, salt and pepper.

4. Top with more cheese, cilantro, and a sprinkle of chili powder.

Refrigerate until serving.
