Crockpot Easy Macaroni & Cheese

Ingredients:

  • Cooking spray

  • 8 ounces macaroni

  • One 12-ounce can evaporated milk

  • 1 1/2 cups whole milk

  • 1/4 cup (1/2 stick) of butter

  • 4 oz. Cream cheese, softened

  • Salt, pepper

  • 2 large eggs, beaten

  • 4 Cups shredded Cheddar cheese, reserve 1/2 Cup for top

  • 1/4 Cup Sour Cream

  • Dash of smoked paprika (or regular paprika works too)

Directions:

  1. In a large 4-quart slow cooker sprayed with cooking spray, mix the macaroni, evaporated milk, whole milk, butter, cream cheese, sour cream, salt, pepper, eggs and all but 1/2 cup of the grated cheese.

  2. Sprinkle the reserved cheese over the top of the mixture and then sprinkle with paprika. Cover and cook on low heat for 2 hours.

  3. Turn off the slow cooker, stir the mixture and serve hot.

Easy, peasy and yummy! Mac and Cheese in the crockpot who knew?!
