Oatmeal Lemon Creme Bars


  • 1/2 cup butter (1 stick), melted

  • 1 cup dark brown sugar, packed

  • 1 1/3 cups all-purpose flour

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1 cup old-fashioned oats

  • 1 (14 oz.) can sweetened condensed milk

  • 1/4 cup lemon juice

  • 1/4 tsp lemon extract


  1.  Preheat oven to 350 degrees.

  2.  Line a square 8x8 pan with parchment paper.

  3.  In your electric mixer, cream together the butter and brown sugar until crumbly.

  4.  In a separate bowl, whisk together the flour, salt and baking powder. Add the oats and stir to combine. Add the dry ingredients to the butter mixture and mix well.

  5.  Press 3/4 of the oat mixture into the lined pan.

  6.  In a small bowl mix together the sweetened condensed milk, lemon juice, and lemon extract. Spread evenly on top of the oat mixture in the pan. Top with the remaining oat mixture.

  7. Bake for 20 to 25 minutes or until the top is golden brown.

  8. Let cool, then refrigerate for 30 minutes or until set.

  9.  Cut into bars and keep stored in the refrigerator.
