Pineapple Balsamic Dressing

Ingredients:

  • 1 cup pineapple puree

  • 1/4 cup Balsamic vinegar

  • 3 tablespoons honey

  • 1/3 cup extra virgin olive oil

  • 1/2 teaspoon salt

  • 1/8 teaspoon black pepper


Directions:

  1. Combine all ingredients into a food processor or blender.

  2. Blend until smooth. If too thick add a bit more vinegar.

  3. Store in a sealed jar or container.

    * Great to serve over fish or fruit salads.
