Snickerdoodle Cinnamon Bun Cookies


  • 1/2 cup (1 stick) butter

  • 1/2 cup shortening

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 2 large eggs

  • 2 teaspoons vanilla

  • 2 1/4 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon cream of tartar

  • 1/2 teaspoon salt

  • 1/8 cup granulated sugar

  • 1 teaspoon cinnamon


  1. Preheat oven to 350 degrees F. Line a 9x13 baking pan with parchment paper.

  2. Place butter in a microwave safe bowl and microwave on high for a minute, or until melted. In a separate large bowl, add the melted butter, shortening, both sugars, eggs, and vanilla. Beat with a mixer until combined. In a separate bowl mix together the flour, baking powder, cream of tartar, and salt. Add to the batter and mix together thoroughly. (Batter will be thick.)

  3. Transfer the batter to the prepared pan and spread it out evenly. Mix together the 1/8 cup of sugar and cinnamon; sprinkle it over the top.

  4. Bake for 30-35 minutes until a toothpick inserted in the center comes out almost clean.

  5. Remove from the oven and allow to cool completely before separating from the parchment paper. Cut into bars and enjoy!
