1 lb. ground turkey
1 large egg
1 large shallot, diced
2 cloves garlic, minced
1/2 Cup shredded mozzarella cheese
1/4 cup finely chopped sun-dried tomatoes
1/4 Cup all purpose non-bleached white flour
1 1/2 Tbsp. Basil
1 T Organic ketchup
Preheat oven to 375 degrees.
Line a baking sheet with foil or parchment paper. (spray foil to prevent sticking)
In a large bowl, combine the ground turkey, egg, shallot, garlic, cheese, sun-dried tomatoes, flour, basil, ketchup, salt and pepper.
Roll the mixture into 1 1/2 inch meatballs and place on the baking sheet.
Bake for 20-25 minutes or until the internal temperature reaches 165 degrees F.
Remove and add to your favorite pasta sauce and serve over your favorite pasta or lower calorie/ carb version - serve over spiralized zucchini! Yum!
