Baked Chicken Cheesy Chimichangas

1 lb. cooked chicken (use your leftover chicken from the night before) 😊
8 oz. package cream cheese, softened
8 oz. Taco blend shredded cheese
2 cups shredded mozzarella cheese
1 ½ T Taco seasoning (see recipe)
½ Cup light cream or ½ and ½
½ Onion, chopped
8 Flour Tortillas
Salsa (any kind)
In a mixer, combine the cream cheese, taco blend cheese, taco seasoning, chopped onion and light cream or ½ & ½ until smooth.
Add the chicken and mix until well combined.
Spread evenly in the center over each tortilla.
Sprinkle a handful of the shredded mozzarella cheese over the top of the chicken mixture on each tortilla. Tuck in the sides and roll up each tortilla.
Lay seam side down on a parchment lined or sprayed with cooking spray cookie sheet.
Spray the tops with cooking spray.
Bake at 350 degrees F for 15 minutes. Turn them over and bake for an additional 15 minutes.
Serve with sides of salsa and sour cream!
Homemade Taco Seasoning:
4 T chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp crushed red pepper flakes
¼ tsp cayenne pepper
1 tsp dried oregano
2 tsp paprika
2 T ground cumin
