Lazy Man's Chicken Pot Pie

Ingredients:
1 package (10 oz.) frozen mixed vegetables, cooked, drained and cooled.
4 cups diced cooked chicken
1 can (10 3/4 oz.) condensed cream of chicken soup
2 ready made pie crusts
2 cups shredded cheddar cheese, reserved
Salt and Pepper to season
1 egg (for egg wash over the top)
Directions:
Pre-Heat oven to 375°F. In a large bowl, combine vegetables, chicken, soup, salt and pepper and 1 cup cheddar cheese; mix well. Note: I used leftover roast chicken from the night before and cut into chunks.
Spray an 8x8 oblong baking dish with non-stick spray.
Spread one pie crust into the bottom and up the sides of the baking dish.
Spoon the chicken mixture over the bottom crust. Top with the remaining cheddar cheese.
Place the second pie crust over the top and pinch all the sides together. Place 4 knife slits over the top and brush with the egg wash.
Bake at 375°F for 30-35 minutes or until the bottom and top are a nice golden brown. Cool 5 minutes and then serve.
