Beef Fajita Rolls w/ Thousand Island Dip

Ingredients:
1 pound ground beef, raw
1 1/2 Tablespoons chili powder
salt, pepper
1 small onion, finely chopped
2 Tablespoons parsley flakes
1 Tablespoon Worcestershire sauce
2 Tablespoons ketchup
5 large flour tortillas
Olive oil Spray or Olive Oil for brushing
4 slices Cheddar Cheese
Shredded Mozzarella cheese
Salsa and Sour cream on the side if desired.
Directions:
Preheat the oven to 450°F.
In a mixing bowl, combine ground beef, chili powder, salt, pepper, chopped onion, parsley, worcestershire sauce and ketchup.
Mix until evenly blended.
Assemble Rolls: Lay one tortilla flat on a clean surface.
Place a slice of the cheddar cheese on the bottom and then spread a thin, even layer of the raw beef mixture over the tortilla, going right to the edges.
Roll the tortilla up tightly from one end and then slice into (4) 1.5 inch thick rounds using a sharp knife. Do the same process for the next three tortilla's.
Arrange the rounds flat to the edge in a round baking pan.
When all rounds are in the pan, place the fifth plain tortilla into the middle of the pan and up the sides of the rounds.
Spray the top of the rounds with the Olive oil spray or using a pastry brush with the olive oil.
Top each round with a heaping tablespoon of shredded mozzarella cheese.
Bake for 20 -22 minutes, until beef is fully cooked, mozzarella is melted and the tortillas are golden brown.
While they are baking make the thousand island dip. (recipe below)
Take the pan out of the oven and immediately pour the dip into the plain tortilla in the middle. Let sit for a couple minutes, and then pull out and dip in the sauce.
*You can also serve with salsa and sour cream if desired.
Thousand Island Dressing/Dip Recipe:
Ingredients:
1⁄2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon white vinegar
2 teaspoons sugar
2 teaspoons sweet pickle relish
1 teaspoon white onion, finely minced
1⁄8 teaspoon salt
1 dash black pepper
Directions:
Combine all of the ingredients in a small bowl. Stir well.
