Beef Tenderloin with Horseradish Sauce

  • ¾ Cup Whipping cream

  • 4 T prepared horseradish

  • 2 T fresh lemon juice

  • ½ tsp salt

  • 1 3-lb beef tenderloin roast

  • Salt and pepper


  1. To Make Horseradish Sauce: Whip the cream until stiff. Stir in the horseradish, lemon juice and salt. Cover and refrigerate for 1 hour.

  2. Preheat the oven to 500 degrees.

  3. Thoroughly coat the beef roast with salt and pepper.

  4. Place the beef tenderloin in a shallow pan and bake for 15 minutes (for rare roast, 18- 20 minutes for medium roast). Turn oven off and leave the roast in the oven for two hours. (DO NOT OPEN OVEN DOOR DURING THIS TIME!)

  5. Remove roast and slice into 1/2-inch-thick slices.

  6. Serve with the horseradish sauce.

Serves 6.
