Black Bottom Cupcakes

Ingredients:

· 1 ½ Cups flour

· ¼ Cup cocoa

· 1 Cup sugar

· 1 tsp baking soda

· ½ tsp salt

· 1/3 cup canola oil

· 1 Cup water

· 1 tsp vanilla

· 1 tsp white vinegar


Cupcake Filling:

· 1 (8 oz.) cream cheese, softened

· 1 egg

· 1/3 Cup sugar

· 1/8 tsp salt

· 6 oz. chocolate chips


Directions:

  1. Preheat oven to 350 degrees.

  2. Mix Filling ingredients together with a mixer until smooth, fold in chocolate chips and set aside.

  3. Sift all dry ingredients together in a separate bowl. Add the remaining Cupcake liquid ingredients and whisk together until smooth.

  4. Line cupcake pan with papers and fill half full of the batter. Top each one with a heaping teaspoon of the Filling mixture.

  5. Bake for 20-25 minutes.

(Makes 1 dozen)
