Breakfast Pizza

Ingredients:

  • One large tortilla

  • 6 Pasture raised eggs

  • 2 small red peppers, 2 small yellow peppers

  • 1/4 cup chopped red onion

  • 1 cup shredded cheddar cheese

  • parsley flakes for garnish

  • vegetable seasoning


Directions:

  1. Preheat the oven to 375 degrees.

  2. Place the large tortilla in a round cake pan, making sure to press along the edges. Making a crust.

  3. Mix the eggs with the vegetable seasoning, and pour into the tortilla crust.

  4. Chop the onion and peppers into small pieces and sprinkle over the eggs.

  5. Add the shredded cheese to the top and sprinkle parsley flakes over the top

  6. Bake in the preheated oven for 25-30 minutes.

  7. Slice and serve.

    Note: You can add or replace the pizza ingredients to what you like. These ingredients are what I had on hand. You could substitute other vegetables and add other cheeses as well.
