Ingredients:
• 1 lg. (3 lbs.) Butternut Squash
• 4 Golden Delicious or Granny Smith Apples
• 4 Garlic cloves, minced
• 2 T Parsley
• 1 tsp. Thyme
• 1 tsp. salt
• 1 tsp. pepper
• 1/3 Cup flour
• ½ Cup Extra Virgin Olive Oil, Reserved
Directions:
1. Peel and cut the squash into 1” size cubes. Peel and cut the apples into ½” size cubes.
2. Preheat the oven to 375 degrees.
3. In a large bowl, toss the squash, apple, garlic, spices, and flour together.
4. Add to a large casserole dish and drizzle ¼ cup of the olive oil over the top.
5. Bake for 1 hour 20 minutes to 1 hour 30 minutes. Halfway through the cooking time, drizzle the other ¼ cup of Olive oil over the top. Continue baking until the squash is tender and sizzling.
6. Remove from the oven and stir everything all together.
Serve immediately.
