Three Squash Fall Soup

Ingredients:


  • One Butternut Squash

  • One Delicata Squash

  • One Bonbon Squash

  • 1 - 2 tsp. Vegetable Seasoning

  • Olive Oil

  • 1 1/2 - 2 Cups Regular Milk

Directions:

  1. Slice the squash in half and scoop out the seeds. Place them face up on a baking sheet and brush with olive oil.

  2. Roast in a 400 degree oven for about 1 hour or until tender. (Delicata squash will be done before the two others - so keep checking)

  3. Let cool, scrape the squash off of the skins and then add to your vitamix, blender or food processor. Add in the vegetable seasoning and 1 1/2 cups milk to start. Add more milk if you want a thinner soup.

  4. Serve warm or cold and enjoy!
