Ingredients:
4 Cups Cooked Rice (any kind works!)
1 LB Chicken tenders or boneless chicken breasts, cut into strips
2 T Canola or vegetable oil + 2T
1 Can Cream of Chicken or Shroom Soup
½ Can Milk
2 t Dijon Mustard
½ C grated Swiss, mozzarella or cheddar cheese (you pick!)
1 ½ C fresh broccoli, chopped
Bunch Scallions, diced or small onion, diced
Directions:
Cook Rice according to package directions.
Brown chicken strips in oil until lightly browned. (3-4 mins per side)
Sauté the broccoli and onion in 2 T oil in a separate pan until tender.
Stir in soup, milk, mustard, and cheese. Stir in the chicken.
Reduce heat and let simmer for 5 minutes.
Add in the Rice and Serve right from the pan!
