Chicken & Broccoli with Rice Skillet

  • 4 Cups Cooked Rice (any kind works!)

  • 1 LB Chicken tenders or boneless chicken breasts, cut into strips

  • 2 T Canola or vegetable oil + 2T

  • 1 Can Cream of Chicken or Shroom Soup

  • ½ Can Milk

  • 2 t Dijon Mustard

  • ½ C grated Swiss, mozzarella or cheddar cheese (you pick!)

  • 1 ½ C fresh broccoli, chopped

  • Bunch Scallions, diced or small onion, diced


  1. Cook Rice according to package directions.

  2. Brown chicken strips in oil until lightly browned. (3-4 mins per side)

  3. Sauté the broccoli and onion in 2 T oil in a separate pan until tender.

  4. Stir in soup, milk, mustard, and cheese. Stir in the chicken.

  5. Reduce heat and let simmer for 5 minutes.

  6. Add in the Rice and Serve right from the pan!
