Cinnamon Craisin Breakfast Cookie


Ingredients:

  • 2 Cups Old-Fashioned Oats

  • ½ Cup unsweetened Apple sauce

  • 2 Large eggs

  • 1/3 Cup Vanilla protein powder (1 standard scoop)

  • 1 ½ teaspoons Baking powder

  • ½ Cup cranberries or craisins

  • 2 teaspoons cinnamon

  • 1/8 teaspoon salt

  • ¼ Cup water

Directions:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

  2. Add to a blender or Vitamix 1 ½ cups oats and blend until the consistency of coarse flour.

  3. Add the applesauce, eggs, protein powder, baking powder, cinnamon, salt and water. Blend until smooth.

  4. Stir in the remaining ½ cup oats and ¼ cup of the cranberries or craisins.

  5. Divide the batter into 6 mounds onto the baking sheet and flatten into circles.

  6. Top with the remaining cranberries or craisins evenly among the six cookies. Press to adhere.

  7. Bake for 12 to 15 minutes or until a knife inserted into the center comes out clean.
