Fajita Marinade & Fixins in the CrockPot

Ingredients:

For Marinade:

  • 1/2 cup olive oil

  • 2 limes, juiced (about 3 tablespoons)

  • 2 garlic cloves, finely chopped

  • 2 Tbsp. Worcestershire sauce

  • 1 Tbsp. packed light brown sugar

  • 2 tsp. ground cumin

  • 2 tsp. kosher salt

  • 1 tsp. black pepper

  • 1 tsp. crushed red pepper flakes

    Other Ingredients:

  • 1 Whole Beef Flank Steak, sliced thin

  • 2 medium Vidalia onions, sliced

  • 1 package mini seedless peppers - orange, red and yellow, sliced

  • Flour Tortillas (or home-made flat bread - check out my recipe)

  • Cheddar cheese for topping

  • Salsa and sour cream for topping


Directions:


  1. Whisk together all the marinade ingredients into a large bowl. Pour into the bottom of a crockpot.

  2. Add the steak, onions and peppers. Toss to coat.

  3. Set crockpot on low for 2 1/2 - 3 hours or until steak is cooked through.

  4. Place a heaping spoonful onto a flour tortilla or flat bread and top with cheese. Add salsa and sour cream if desired. Roll up and devour!
