Ingredients:
For Marinade:
1/2 cup olive oil
2 limes, juiced (about 3 tablespoons)
2 garlic cloves, finely chopped
2 Tbsp. Worcestershire sauce
1 Tbsp. packed light brown sugar
2 tsp. ground cumin
2 tsp. kosher salt
1 tsp. black pepper
1 tsp. crushed red pepper flakes
Other Ingredients:
1 Whole Beef Flank Steak, sliced thin
2 medium Vidalia onions, sliced
1 package mini seedless peppers - orange, red and yellow, sliced
Flour Tortillas (or home-made flat bread - check out my recipe)
Cheddar cheese for topping
Salsa and sour cream for topping
Directions:
Whisk together all the marinade ingredients into a large bowl. Pour into the bottom of a crockpot.
Add the steak, onions and peppers. Toss to coat.
Set crockpot on low for 2 1/2 - 3 hours or until steak is cooked through.
Place a heaping spoonful onto a flour tortilla or flat bread and top with cheese. Add salsa and sour cream if desired. Roll up and devour!
