Set your crockpot on low for 2.5 hours.
Place your rolls open faced on a large sheet pan.
Place 2 cheddar cheese slices on the open faced rolls.
Scoop out any excess gravy from the crockpot and set aside. (You can use this for dipping if desired)
Scoop a handful of the meat and veggies onto each of the 6 rolls, until all the mixture is used up. (on top of the cheddar cheese slices)
Top with more shredded cheddar and mozzarella cheese. (as much as you like)
Place in a pre-heated 375 degree F oven for about 10-15 minutes or until the rolls are toasted and the cheese has melted. Serve Immediately! ** Dip in the Au Jus gravy if desired. You can also top with mayonnaise, barbecue sauce, hot sauce or any other dressing you like as well. Enjoy!
