Gnocchi Soup


Ingredients:

  • 1 T Olive oil

  • 4 T Butter

  • 1 C onion, chopped

  • ½ C celery, chopped

  • 2 cloves garlic, minced

  • ¼ C flour

  • 1 Quart ½ & ½

  • 16 oz. chicken broth

  • 2 Cups cooked chicken, cubed

  • ½ tsp parsley

  • ½ tsp thyme

  • ¼ tsp nutmeg

  • 1 tsp salt

  • 1 tsp pepper

  • 1 C carrots, shredded

  • 1 12 oz. package of gnocchi

  • 3 oz. fresh baby spinach

Directions:

  1. Fry in a large pot – olive oil, butter, onion, celery, carrots, and garlic until tender.

  2. Add flour and the ½ & ½. Simmer for 10 minutes and then add the remaining ingredients, saving the spinach for last.

  3. Cover and Simmer for 20 minutes more.

Serve and Enjoy!
