Guacamole Chicken Melt


  • 4 boneless, skinless chicken breasts

  • 2-4 tsp. blackened seasoning (or as much as you like)

  • salt, pepper

  • 4 Tablespoons olive oil

  • 1 Cup guacamole (home-made is great!) * see recipe below (or store-bought)

  • 1 Cup shredded Mexican cheese blend


  1. Place the chicken breasts into a plastic bag and seal closed. Flatten breasts to an even 1/2 inch thickness.

  2. Season chicken with the blackened seasoning, salt and pepper.

  3. In a 12 inch skillet, heat the oil on medium heat.

  4. Cook the chicken breasts 4-5 minutes per side, until fully cooked.

  5. Top each breast with a spoonful of the guacamole and cover each one with the cheese.

  6. Cover skillet and heat until the cheese has melted.

  7. Plate and serve!
