1 Large Bag of Frozen Meatballs
1 Large Red, Orange and Green Pepper
1 Large Vidalia Onion
2 Cups Mozzarella Cheese (or more!)
6 Grinder Rolls
Extra Virgin Olive Oil
Place the frozen meatballs and sauce in to your crockpot. Cook for 4 hours on Low.
Slice your peppers and onions. Place them on a sheet pan and sprinkle the EVOO, salt and pepper over them. Roast for about 15-16 minutes. Cool, Cover and set aside for later.
Place your sliced grinder rolls in half on a sheet pan and top with the meatballs and sauce on one half. On the other half, add the peppers and onions.
Top both sides with mozzarella cheese. (As much as you like)
Bake in a 425 degree oven for 15 minutes or until cheese has melted.
