· 12 Vanilla Wafer Cookies
· 2 (8 oz.) Cream cheese, softened
· ½ Cup Sugar
· 1 tsp Vanilla
· 2 Eggs
Preheat the oven to 325 degrees.
Line a 12-muffin tin pan with cupcake liners.
Place a vanilla wafer cookie in each holder.
Mix the cream cheese, vanilla, and sugar together until well blended.
Add the eggs and mix well.
Scoop the filling over the wafer cookies filling each holder ¾ full.
Bake for 25-35 minutes until firm and slightly browned.
Remove from the pan when cool and refrigerate.
Top with your favorite fruit if desired.
