One-Pot Spaghetti with Bacon & Spinach


  • 8-10 slices ready cooked bacon, chopped

  • 3 cloves garlic, sliced

  • 2 (15 oz.) cans diced tomatoes

  • 2 3/4 Cups water

  • 1 tsp salt

  • 15 oz. Spaghetti, broken in half

  • 3 Cups packed spinach

  • 1/2 Cup freshly grated parmesan cheese


  1. In a large pot add the garlic, tomatoes, water and salt. Heat to a boil on high.

  2. Once boiling, add the spaghetti and spinach, submerging the pasta completely.

  3. Reduce heat to maintain a simmer. Cover and cook 10 minutes, or until pasta is al dente.

  4. Stir in the parmesan and chopped bacon. Season with salt and pepper to taste.
