One-Pot Spaghetti with Bacon & Spinach
8-10 slices ready cooked bacon, chopped
3 cloves garlic, sliced
2 (15 oz.) cans diced tomatoes
2 3/4 Cups water
1 tsp salt
15 oz. Spaghetti, broken in half
3 Cups packed spinach
1/2 Cup freshly grated parmesan cheese
In a large pot add the garlic, tomatoes, water and salt. Heat to a boil on high.
Once boiling, add the spaghetti and spinach, submerging the pasta completely.
Reduce heat to maintain a simmer. Cover and cook 10 minutes, or until pasta is al dente.
Stir in the parmesan and chopped bacon. Season with salt and pepper to taste.
