Tortellini & Sausage Crock Pot Soup

1 ½ lbs. (or (2) 12 oz. packages) Italian Chicken Sausage (or you can use Pork)
1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
½ teaspoon dried thyme
½ teaspoon crushed red pepper
2 cups beef broth
4 cups vegetable broth
1 small can tomato paste
1 (14.5 ounce) can stewed tomatoes
1 package (20 ounces) refrigerated cheese tortellini (add during last hour)
Freshly grated Parmesan Cheese
Add the Beef and Vegetable Broth to the crockpot. Stir in the tomato paste and stir until fully dissolved. Add the stewed tomatoes.
Next cut the sausage into bite size pieces and then add to the crockpot along with the onion, garlic, and seasonings.
Stir all together.
Set the crockpot on low for 6 hours.
During the last hour add the cheese tortellini and finish cooking on low.
Sprinkle each bowl with freshly grated Parmesan cheese and serve!
