Ingredients:
1 Cup creamy peanut butter
¼ Cup melted butter
2 T brown sugar
2 Tsp vanilla
2 Cups powdered sugar
1 ½ bags of 11-12 oz. milk or dark chocolate chips
Directions:
1. Stir together the peanut butter, melted butter, brown sugar and vanilla until combined. Gradually mix in the powdered sugar until smooth.
2. Press the mixture onto a parchment lined cutting board and roll out the mixture into an 8 x 8 square about ¼ inch thick.
3. Place into an 8x 8 pan (lined with parchment paper for easy removal) and freeze for about ½ hour. Remove from freezer and cut out into circle shapes using a cookie cutter or round object.
4. Place each circle onto a parchment lined cookie sheet and return to the freezer for 45-50 minutes.
5. Melt chocolate chips in the microwave for about 2 minutes until melted and smooth.
6. Using a spoon, or tongs, carefully dip the peanut butter circles into the melted chocolate covering both sides. Return to freezer to harden chocolate. Eat right away!
