Peanut Butter Oatmeal Creme Cookies


Ingredients:

  • ½ cup (1 stick) butter. Softened

  • ½ cup organic smooth peanut butter

  • ½ Cup white sugar

  • ½ Cup packed light brown sugar

  • 1 teaspoon pure vanilla extract

  • 1 Egg

  • ¾ Cup All-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 Cup quick cooking oats

For Crème Filling:

  • 3 T Butter, softened

  • 1 Cup confectioners’ sugar

  • ½ Cup organic smooth peanut butter

  • 4-5 Tablespoons light cream

Directions:

  1. In a mixing bowl, cream together 1/2 cup butter, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.

  2. In another bowl, combine the flour, baking soda, baking powder, salt and oats.

  3. Add to the cream mixture until combined.

  4. Drop by tablespoons onto parchment lined baking sheets and press each mound down with a fork to form ¼-inch thick cookies.

  5. Bake at 350 degrees F for 10 minutes, or until cookies are a light brown. Cool completely on wire racks. While baking, make the crème filling below:

To Make Filling:

  1. Cream 3 tablespoons butter with the confectioners' sugar, 1/2 cup peanut butter, and the light cream. (Should be a smooth consistency, if too thick add more light cream)

  2. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
