4 cups of frozen pineapple chunks
2/3 Cup coconut milk
6 T granulated sugar (or substitute)
2 teaspoons lemon juice
2 teaspoons lime juice
2 teaspoons vanilla
In a food processor, add the frozen pineapple, coconut milk, sugar, lemon juice, lime juice and vanilla.
Blend all ingredients until smooth and there are no lumps. About 4-5 minutes.
Serve immediately or freeze for 30 minutes for the whip to be firmer.
Makes 4 (1 cup) servings.
