Pineapple Whip

Ingredients:

  • 4 cups of frozen pineapple chunks

  • 2/3 Cup coconut milk

  • 6 T granulated sugar (or substitute)

  • 2 teaspoons lemon juice

  • 2 teaspoons lime juice

  • 2 teaspoons vanilla


Directions:

  1. In a food processor, add the frozen pineapple, coconut milk, sugar, lemon juice, lime juice and vanilla.

  2. Blend all ingredients until smooth and there are no lumps. About 4-5 minutes.

  3. Serve immediately or freeze for 30 minutes for the whip to be firmer.

Makes 4 (1 cup) servings.
