Ingredients:
3 lbs. of ground turkey or 90% lean ground beef (less grease) (I used ground turkey)
2 eggs
1 ½ cups Italian flavored bread crumbs
2 T dried basil, parsley, oregano
2 garlic cloves, minced
1 small onion, chopped
Salt, pepper to taste
4 T Worcestershire sauce
24 oz. Jar of marinara sauce divided
16 oz. mozzarella cheese block sliced into 12 slices
8 oz. pepperoni slices
2 T parmesan cheese, garnish
2 T parsley flakes, garnish
Directions:
Preheat oven to 350 degrees.
In a large bowl, combine the ground turkey or ground beef, eggs, bread crumbs, spices, garlic, onion, salt & pepper, Worcestershire sauce and ½ jar of the marinara sauce (12 oz.). Mix until all ingredients are thoroughly combined.
On a sprayed baking sheet, create a rectangle using 1/3 of the mixture.
Place a layer of pepperoni over the top of the rectangle.
Place the mozzarella slices over top of the pepperoni.
With the remaining ground mixture, cover the sides and the top of the cheese.
Cover the entire loaf with the remaining pepperoni.
Sprinkle the parmesan cheese and parsley flakes over the top.
Bake for 45 minutes. Let sit for 5 minutes, then slice into squares and serve with the remaining marinara sauce!
