Quinoa, Mango & Black Bean Southwestern Cold Salad

Ingredients:

• 15- ounce can black beans, rinsed and drained

• 1 cup cooked quinoa (tricolor), cooked according to package directions

• 1 cup baby whole corn, chopped

• 1 cup red bell pepper, chopped

• 1 cup fresh mango, chopped

• 1/4 cup finely chopped red onion

• Juice from 1 medium lemon

• 2 tbsp extra virgin olive oil

• 4-5 T Agave syrup (or to your liking)

• 2/3 Cup Apple Cider Vinegar (or to your liking)

• 2 garlic cloves, minced

• ¼ tsp ground cumin

• ¼ tsp chili powder

• ¼ tsp ground turmeric


Directions:

1. Mix together the beans, quinoa, corn, bell pepper, mango and red onion in a medium sized bowl.

2. Whisk together the lemon juice, olive oil, agave syrup, apple cider vinegar, garlic, cumin, chili powder, and turmeric in a small bowl.

3. Drizzle over the mixture and toss.

4. Refrigerate until ready to serve.
