Shortbread Coconut Cookies
1 Cup all-purpose Flour
2 Tbsp. Cornstarch
½ Cup Confectioners’ Sugar
1 Cup butter (2 sticks), softened
1 ½ cups (approx.) Sweetened flaked coconut
Mix flour, cornstarch and sugar in a mixing bowl.
Blend in the butter until a soft dough is formed. If the dough is too soft, cover and chill for one hour.
Shape into ¾ inch balls. Roll in the coconut flakes.
Place on parchment lined cookie sheets.
Bake at 300 degrees F. for 20-25 minutes, or until lightly golden brown.
(Makes about 2 dozen)
