Shortbread Coconut Cookies


Ingredients:

  • 1 Cup all-purpose Flour

  • 2 Tbsp. Cornstarch

  • ½ Cup Confectioners’ Sugar

  • 1 Cup butter (2 sticks), softened

  • 1 ½ cups (approx.) Sweetened flaked coconut

Directions:

  1. Mix flour, cornstarch and sugar in a mixing bowl.

  2. Blend in the butter until a soft dough is formed. If the dough is too soft, cover and chill for one hour.

  3. Shape into ¾ inch balls. Roll in the coconut flakes.

  4. Place on parchment lined cookie sheets.

  5. Bake at 300 degrees F. for 20-25 minutes, or until lightly golden brown.

(Makes about 2 dozen)
