Smashed Ground Chicken Fajitas

Ingredients:
Chicken Mixture:
2 lbs ground chicken
1 cup grated Parmesan cheese
1 Tbsp garlic powder
1 Tbsp oregano
1 Tbsp smoked paprika
Salt & pepper to taste
Other Ingredients:
1 medium Vidalia onion, thinly sliced
4 large tortillas
4 slices cheddar cheese
Green chili aioli sauce
Olive oil or avocado spray
Butter (for caramelizing onions)
Directions:
1. Prepare the Chicken
In a large bowl, combine:
Ground chicken
Parmesan cheese
Garlic powder
Oregano
Smoked paprika
Salt and pepper
Mix until well combined and divide into 4 equal portions.
2. Caramelize the Onions
Melt 1–2 tablespoons butter in a skillet over medium heat.
Add sliced Vidalia onions.
Cook slowly for 15–20 minutes, stirring occasionally, until soft, golden, and caramelized.
Set aside.
3. Build the Smash Wraps
Lay each tortilla flat.
Press one portion of the chicken mixture evenly across the surface of each tortilla, leaving a small border around the edge.
4. Cook
Heat a griddle or large skillet over medium-high heat.
Lightly spray with olive oil or avocado oil.
Place each tortilla chicken-side down onto the hot surface.
Cook 5–6 minutes until the chicken develops a golden-brown crust.
Flip and cook another 2–3 minutes until the tortilla is crispy and the chicken is fully cooked.
5. Add Cheese
Place one slice of cheddar cheese on top of each cooked chicken side.
Allow it to melt.
6. Finish
Top with caramelized onions.
Drizzle with green chili aioli.
Fold in half and serve immediately.
Serving Suggestion
Serve with roasted zucchini, sweet potato fries, a side salad, or your favorite veggies.
