4 Medium sized Zucchini
3 Cups Smashed Potato Chips (I used Lays Cheesy Garlic Bread) approx. 1/2 bag
3 Cups flavored Panko Bread Crumbs
2 T Vegetable seasoning
Olive Oil or Avocado Spray
Slice the zucchini into 1 inch rounds.
Mix the eggs with the vegetable seasoning.
Crush the chips and then mix with the breadcrumbs.
Line a baking sheet with tin foil or parchment paper and spray with the oil.
Dip the zucchini rounds into the egg mixture, and then dip into the chip/breadcrumb mixture. Make sure to cover both sides.
Place in lines on the baking sheet.
Spray over the bites with the olive oil or avocado spray.
Air fry in a 375 degree oven for 20-25 minutes or until softened and crispy browned.
Serve with a side of ranch dressing or serve plain.
