Spinach Cheese Breakfast Casserole


Ingredients:

  • 24 large eggs (beaten)

  • 1 ½ cups 1% milk

  • 1 cup heavy cream

  • 12 ounces Feta cheese (crumbled)

  • 8 oz. shredded cheddar cheese

  • 3 shallots (chopped)

  • 4 cloves garlic, minced

  • 4 scallions (chopped)

  • 3 plum tomatoes (chopped)

  • Salt and pepper (to taste)

  • 6-ounce bag fresh spinach

  • Non-stick cooking spray

Directions:

1. Preheat the oven to 350F. Spray a 9 x 13-inch deep baking dish with non-stick spray.

2. In a large bowl whisk the eggs, milk and heavy cream. Stir in the feta, cheddar cheese, shallots, garlic, scallions, tomatoes, salt and black pepper.

3. Pour into the prepared dish. Add the Spinach and mix to combine and coat.

4. Bake until the center is solid and cooked through, about 1 hour 15 minutes.
