1-pound lean ground beef
8 ounces macaroni
½ cup chopped onion
½ Jar of Spaghetti sauce
1 medium jar of mild salsa
1 package of taco seasoning mix
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese or Mozzarella
1 cup crushed tortilla chips
½ cup sour cream (optional)
1) Preheat oven to 350 degrees. Cook pasta until al dente and drain.
2) In a large skillet, cook and stir ground beef and chopped onion over medium heat until cooked thru. Mix in sauce, salsa and taco seasoning mix. Stir in cooked pasta.
3) Spoon beef mixture into a 9 x 13-inch baking dish. Sprinkle tortilla chips and grated cheeses on top. (I sliced mozzarella sticks for the top)
4) Bake for 30 to 35 minutes until the cheese is melted.
Serve with the sour cream on the side if desired.
