Veggies from the Farm Rice Pilaf
3 kinds of Squash (one each)- Yellow, Zucchini, and Patty - or any or even more of your choosing!
1 medium onion
5-6 cloves fresh garlic
Leftover any kind of rice (approx. 2-3 cups)
2 T Extra virgin olive oil
4 T Organic Ghee
2 Cups low-fat mozzarella cheese
2 Peppers (any kind)
Slice and chop up all your veggies.
In a large Skillet add the EVOO and Ghee. Add in all your veggies and seasonings.
Stir- fry until the veggies are tender.
Stir in the rice until heated.
Remove from the stove top and stir in the cheese until melted.
Serve and enjoy!
