Veggies from the Farm Rice Pilaf


  • 3 kinds of Squash (one each)- Yellow, Zucchini, and Patty - or any or even more of your choosing!

  • 1 medium onion

  • 5-6 cloves fresh garlic

  • Leftover any kind of rice (approx. 2-3 cups)

  • 2 T Extra virgin olive oil

  • 4 T Organic Ghee

  • 2 Cups low-fat mozzarella cheese

  • 2 Peppers (any kind)

  • Vegetable Seasoning

  • salt, pepper


  1. Slice and chop up all your veggies.

  2. In a large Skillet add the EVOO and Ghee. Add in all your veggies and seasonings.

  3. Stir- fry until the veggies are tender.

  4. Stir in the rice until heated.

  5. Remove from the stove top and stir in the cheese until melted.

  6. Serve and enjoy!
