Anytime Shredded Zucchini Bake

Ingredients:

• 4 Cups shredded zucchini, all liquid squeezed out

• 1/2 cup shallots, chopped

• 2 T Basil

• 1 ¼ cups part skim mozzarella, reserved

• 4 tbsp. grated parmesan cheese

• 1 cup whole wheat flour

• 2 tsp baking powder

• 1 1/3 cup fat free milk

• 2 tsp olive oil

• 4 large eggs, beaten

• 1/2 tsp kosher salt

• fresh cracked pepper to taste

• cooking spray


Directions:

1. Preheat oven to 400°. Lightly spray a casserole dish with cooking spray.

2. Combine zucchini, shallots, basil, and 1 cup of the mozzarella cheese in a bowl.

3. Sift flour and baking powder in a medium bowl. Then add the milk, olive oil, eggs, salt & pepper. Blend Well.

4. Combine with the zucchini mixture and pour it into the baking dish.

5. Top with parmesan cheese and the ¼ cup of mozzarella cheese. Bake 45 minutes or until knife comes out clean from the center.

6. Let it stand at least 5 minutes before serving.
