Ingredients:
1 Flat-cut Beef Brisket (about 3 lbs.) (you can also use a Chuck Roast)
1/2 Cup of your favorite BBQ Sauce (or home-made) *
1/2 Cup unsweetened Applesauce
1/4 Cup Beef Stock
2 tsp. chopped fresh Rosemary **
1/2 tsp. salt, 1/2 tsp. pepper
Directions:
In a medium size bowl, whisk together the BBQ Sauce, applesauce, beef stock, salt and pepper.
Transfer the brisket to a crockpot and pour the mixture over the brisket. Top with the rosemary.
Cover and cook on Low for 5 hours.
Transfer Brisket to a cutting board and let stand for 15 minutes. Reserve mixture.
Slice brisket across the grain and serve with the applesauce mixture juice over mash potatoes, rice or noodles. (I also roasted red and yellow peppers and onions and served on the side to top with the brisket.)

** I used my "frozen" olive oil and fresh rosemary cube in this recipe. (I took my summer collection of herbs (rosemary, basil and dill) - added them with Olive oil into a flexible Ice cube tray and froze them.) I now have fresh herbs during the whole winter season! The Rosemary is fabulous in this recipe!
