Ingredients:
3 Medium bananas, mashed
1/2 Cup Mayonnaise
1 Egg
1 1/2 Cups unbleached white flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 Cup White Sugar
1/2 Cup chopped pecans or walnuts
Directions:
Preheat oven to 350 degrees.
In a bowl, mix together the mashed bananas, mayonnaise and egg.
In a separate bowl, combine the flour, baking soda, salt, sugar and nuts.
Add the flour mixture to the wet ingredients and stir until just combined. (The mixture will be very thick. DO NOT OVERMIX.)
Pour into a greased loaf pan.
Bake for 60-70 minutes or until a wooden toothpick comes out clean.
Let cool for a few minutes and then remove from the pan to allow to cool completely.
