Blackened Sirloin with Mustard Sauce

Ingredients:

  • 1 cup creole mustard

  • 2 Tablespoons mayonnaise

  • 1 Tablespoon Worcestershire sauce

  • 1 teaspoon fresh ground black pepper

  • 2 pounds center cut prime sirloin of beef

  • 1/2 cup vegetable oil

  • 1-1/4 sticks whole butter, cut into pats

Blackened Seasoning:

  • 2 Tablespoons paprika

  • 1 Tablespoon garlic powder

  • 1 Tablespoon onion powder

  • 1 Tablespoon sea salt

  • 2 teaspoons black pepper

  • 1 teaspoon cayenne pepper

  • 1 teaspoon oregano

  • 1 teaspoon thyme

(Mix all spices together)


Directions:

  1. Mix mustard, mayonnaise, Worcestershire, and pepper together. Set aside.

  2. Preheat oven to 350 degrees.

  3. Coat Sirloin with oil and dredge on all sides with seasoning. Place sirloin in a well- heated (hot) iron skillet. Add 2 to 3 pats of butter. Cook 5 minutes on each side, adding butter as needed.

  4. Transfer to oven and roast until meat reaches internal temperature of 140 degrees.

  5. Slice sirloin into 12 even slices and arrange on a serving platter. Serve with the mustard sauce.
