Chicken Cordon Bleu Casserole

1 Package (8 oz. stuffing mix)
1 can cream of chicken soup
1 T Dijon mustard
3 -4 boneless, skinless chicken breasts (cut into 1 “pieces)
3 C fresh broccoli florets, chopped
2 C cooked chopped ham
6 slices swiss cheese, or block cut into several pieces
Salt and pepper
Preheat oven to 375 degrees. Prepare stuffing mix as directed on package. Set aside.
Mix soup and mustard together in a large bowl until well combined. Season chicken breasts with salt and pepper and then stir in chicken chunks, chopped broccoli florets and chopped ham. Stir to combine.
Spoon into a 2-quart casserole dish sprayed with cooking spray. Top with cheese layers and then spoon the stuffing on top.
Bake 50-60 minutes until chicken is cooked and casserole is heated through.
