Crab Balls with Lemon Mayo Sweet Sauce

Ingredients: (Makes 8 Balls)

  • 16 oz. imitation crab, flake style

  • 1 cup finely diced green or red bell pepper

  • 1 cup of finely diced onion

  • 4 Tablespoons mayonnaise

  • 2 Tablespoons lemon juice

  • 2 large eggs

  • 2 tsp Cajun seasoning

  • Ground black pepper to taste

  • 1 cup of toasted flavored bread crumbs

Lemon-Mayo Sweet Sauce:

  • ½ Cup mayonnaise

  • 2 T Lemon Juice

  • 1 tsp Sugar

  • 1 Garlic clove, finely minced (Mix all ingredients together) Serve on the side.


Directions:

  1. Preheat oven to 400 degrees. Lightly spray a baking sheet with cooking spray.

  2. Shred crab into smaller pieces and place in a medium bowl with all the ingredients, using 1/2 of a cup of the breadcrumbs.

  3. Mix well and shape the mixture into 8 balls. (each ball is approx. 1/3 measuring cup)

  4. Coat the crab balls in the remaining bread crumbs, pressing crumbs onto the balls, and place on the baking sheet.

  5. Bake for 20- 25 minutes or until golden brown.

  6. Serve hot with the lemon mayo sweet sauce on the side.
