Ingredients: (makes 12 muffins)
¾ Cup Whole Wheat Flour
¾ Cup Oat Bran Cereal
½ Cup Brown Sugar
1 tsp Baking powder
1 tsp Baking soda
1 tsp cinnamon
1/3 Cup mashed Banana
½ Cup plain Greek yogurt
1 Egg
2 T vegetable oil
1 tsp. Vanilla
½ Cup shredded carrots
½ Cup Craisins
½ Cup chopped Walnuts
Directions:
Preheat oven to 400 degrees F.
To a large bowl add the dry ingredients and mix all together.
In a separate bowl, mix the banana, yogurt, egg, oil & vanilla.
Add the wet ingredients to the dry ingredients and mix until just moistened.
Fold in the carrots, craisins and walnuts.
Lightly grease or line a 12-muffin tin with paper cups.
Fill each cup ¾ full.
Bake for 20 minutes. Cool on a rack and store in a sealed container.
