Double Chocolate Brownie Cookies - Gluten Free!

  • ½ Cup Cocoa powder

  • 1 ½ Cups Confectionary Sugar

  • ½ Cup Semi-sweet chocolate chips

  • 2 Egg whites

  • 2 tsp corn starch

  • 1/4 tsp Salt

  • 1 tsp Vanilla extract


  1. Preheat the oven to 325°F.

  2. Line 1 cookie sheet pan with parchment paper.

  3. In a large bowl, sift in the dry ingredients: sugar, cornstarch, cocoa powder and salt.

  4. In an electric mixer; beat in the egg whites and vanilla into the dry mixture.

  5. Fold in the chocolate chips using a spatula. (You will have a sticky cookie dough.)

  6. Using 2 spoons or a cookie scoop, drop small 1- inch sized batter onto the pan and bake for about 12 – 15 mins or until the cookies rise and crack on the top with a shiny crust.

  7. Makes about one dozen cookies.
